Besan Karela (North Indian Recipes)
Besan Karela Sabzi represents a popular and delectable Indian side dish incorporating bitter gourd (karela) and gram flour (besan). Bitter gourd, esteemed for its inherent bitterness and health-promoting properties, is a staple in Indian culinary practices.
The culinary process involves sautéing thinly sliced bitter gourd in oil with a blend of spices, followed by a coating of gram flour and spices. Subsequent to meticulous cooking, the dish achieves a crispy texture and the gram flour is thoroughly cooked. Besan Karela Sabzi is traditionally served alongside rice or traditional Indian flatbreads such as roti or paratha, presenting a versatile and palatable accompaniment suitable for diverse meal settings.
Recipe: Yields for 3 persons
Ingredients:
Karela washed, seeds removed and chopped 4nos
Green chilli slit in between 1
Oil 4tbsp
Mustard seeds 1/2 tsp
A pinch of asafoetida
Turmeric pdr 1/2 tsp
Kashmiri chilli pdr 1/2 tsp
Dhania pdr 1/2 tsp
Jeera pdr 1/2 tsp
Goda masala 1 tsp (Maharastrian Garam Masala)
A pinch of sugar(optional)
Salt to taste
Besan 2 tablespoon
Method:
Heat 4 tbsp oil in a pan. Throw mustard seeds and let them splutter. Add asafoetida, turmeric pdr.
Add the chopped karela(bitter gourd) and sautè well. Add salt accordingly. Sautè again for a minute.
Cover and cook it on medium heat till they become soft n crunchy. Sautè it in between.
After it is cooked well, add the dry masalas mentioned above.
Sautè well in medium heat until the raw smell of the masalas is gone. Don't cover. At this time add besan and sautè for about 5 to 7 mins till the besan gets coated on the karela well..all masalas and besan get blended well.
Besan Karela Sabzi is ready to be served. It is a healthy and flavorful dish that is rich in fiber and nutrients and is perfect for those who enjoy bitter flavors.
