 I recently tried my hand at baking eggless coconut cookies, and I was pleasantly surprised by how they turned out. These delightful sweet treats are made without eggs and are infused with the wonderful flavor of shredded or desiccated coconut. The texture of these cookies is a perfect balance of crispiness on the outside and chewiness on the inside.

To prepare these mouthwatering eggless coconut cookies, you'll need some basic ingredients such as all-purpose flour, butter (or vegetable oil), coconut sugar (a healthier alternative to regular sugar), baking powder, shredded coconut, and vanilla extract. Recipe:

Ingredients:

All purpose flour 1 cup

Desiccated coconut 1/2 cup

Coconut sugar 3/4 cup (I used coconut sugar. Normal sugar can be used)

Butter 1/2 cup ( at room temperature)

Baking pdr 1 tsp

Salt 1/4 tsp

Some desiccated coconut for dusting  


                                                                




Method:


Preheat the oven to 180 deg for 10 mins. In a bowl, add the butter, coconut sugar, baking powder, and salt. Whisk well with a hand whisker. Add the flour and desiccated coconut. Combine well to form a cookie dough. Don`t knead. 


Place a parchment paper on the baking tray. Divide the dough and make small balls. Dust it with desiccated coconut on the top and bake it for about 15 mins at 180 deg. Take it out and allow it to cool completely. 


Tasty Coconut Cookies are ready. Enjoy!!
