Pineapple Kesari (Sweet Treats)
Pineapple Kesari is a delightful South Indian dessert made from semolina (rava/sooji), pineapple, ghee, and sugar. It's a beautifully fragrant dish enriched with the warm flavors of cardamom and saffron, traditionally savored during festive celebrations or as a sweet ending to a meal.
The recipe is wonderfully simple, requiring just a few basic ingredients. The addition of pineapple lends a delightful sweet and tangy taste, while the saffron and cardamom powder add a touch of aromatic complexity. Pineapple Kesari is a versatile treat that can be relished both as a dessert and a snack, making it a favorite among a diverse range of palates.
Here is the recipe:-
Recipe: Yeilds for 4 to 5 persons
Ingredients:
Semolina 1 cup
Sugar 1.5cup
Ghee 1 cup
Fresh or canned pineapple 1 cup
Saffron 6-7 strands
Halved cahews 8-9
Cardamom powder 1 pinch
Pineapple essence 1⁄2 tsp
Water 2cups
Method:
Heat a pan and add 1 tbsp ghee. Once the ghee is hot, fry the cashews until they are golden brown, and
then keep it aside. Add the remaining ghee and roast the semolina. Add two cups of water and cook it on a low flame. Make sure that there aren’t any lumps. Add the sugar after cooking the semolina completely.
Stir well and add the pineapple essence, pineapple pieces, and saffron strands. Combine well. Add a pinch of cardamom powder and garnish with the fried cashews. You can also add a drop of yellow food color. (optional)
