 Rocket Salad (International Cuisine)

 

 Rocket salad, also known as arugula salad, is a popular green salad made with arugula leaves and is often used in Mediterranean and Italian cuisine.  This leafy green is known for its distinctiveness, which adds a refreshing bite to salads. The primary characteristic of rocket salad is its peppery, mustard-like flavor, which is both refreshing and slightly bitter. 


The salad is often paired with a variety of ingredients that complement and balance its bold flavor, making it a popular choice in many cuisines. When combined with ingredients like sweet cherry tomatoes tossed in olive oil with a sprinkle of Italian herbs, salt, and pepper and mixed with arugula leaves, it creates a delicious combination.


To give a fruity taste to the salad, you can also add seasonal fruits like watermelon and kiwi, which pair well with rocket salad. Adding pine nuts or walnuts gives the salad a crunchy texture using different dressings like balsamic vinegar or honey mustard. The balance of flavors makes it a versatile dish that can be served as a light starter, a side dish, or a healthy main course.

 The salad is easy to make and here is the recipe:


                                                           

Recipe:  Yields for 2 persons                           

Ingredients:
 
Rocket  1 pack washed
 
Cherry tomatoes approx. 250g  
 
Golden brown roasted pine nuts 1.5 handfuls 

Olive oil4 tbsp  
 
Salt to taste
 
Pepper to taste
 
Chilli flakes
 
Italian herbs and seasoning
 
Garlic 5-6 cloves  finely chopped
 
Watermelon or pasta (penne)
 
Mini mozzarella balls 1 pack 

Dried basil a sprinkle
 
Dried oregano  sprinkle


Method:
 Wash the rocket, strain the water and keep it aside. Take the tomatoes and cut them in half and finely chop the garlic. Add about 3 tbsp of olive oil into the pan and add the tomatoes and garlic. Let the tomatoes cook for about 15 min or until the tomatoes' moisture is gone.
 
Add all the Italian herbs and seasoning as well as salt (more than what you usually add because this is the dressing for the salad) and pepper while the tomatoes are cooking. Sauté occasionally so that the tomatoes don't stick to the pan. 
 
In the meanwhile, chop your watermelon into bitesize cubes. If you are not using watermelon, you can boil about 2 handfuls of penne pasta and cook until it is al dente. Once the pasta has cooked, wash it with cold water to stop the cooking process and to prevent the pasta from sticking.
In a bowl add the washed rocket, roasted pine nuts, the cooked tomatoes, watermelon or pasta and the mini mozzarella balls. Gently mix everything and add 1 tbsp of olive oil and serve.
