Eggless Oats Banana Cake (Eggless Cake Recipe)

Recipe:                                                       

 Ingredients:

Ripe Bananas   5 nos

Oats 3 cups

Almond flour 2 cups and half cup extra( to give the perfect consistency)

Coconut sugar 3/4 cup

Baking Soda 1/2 tsp

Baking powder 1 1/2 tsp

Vanilla extract 1 tsp ( I used vanilla paste)

Oil 1/2 cup

Walnuts 1/2 cup chopped ( reserve some for topping)

Cranberries some for topping

Method

In a bowl, mash the bananas into a smooth puree. Add coconut sugar and whisk well. Add oil, vanilla extract, baking soda, and baking powder to it. Whisk again to combine. Add oats and almond flour. Mix well. Give a fold. Add oats and almond flour in batches.
Mix well. 

Add chopped walnuts and give a final fold. Preheat the oven to 180 deg. C. Grease the spring form (bread loaf spring form). Keep the parchment paper. Pour the batter and top it with cranberries and walnut.

 Let it bake for about 25 to 40 mins at 180 deg C. Last 10 mins of baking, you can reduce the oven temperature and let it settle down in the oven to give a rustic texture on the top. Prick it with a toothpick to check whether it is baked or not. If it comes out clean then it is baked.
Let it cool down completely. Enjoy!!!


Note: Don´t cut when it is hot. As it is flourless, the texture of the bread is very delicate. Slice it when it is completely cooled. I am sure you will enjoy this and it is very healthy and filling.
Banana acts as a flavor-enhancing property in the bread. It makes the bread soft and moist.
