Ras Malai Tres Leches (Eggless Cake Recipes)

Ras Malai Tres Leche Eggless cake. Made this recently
Recipe:
For the cake ingredients:
1 cup yogurt
3/4 cup sugar
1/2 cooking oil
1 1/2 cups of flour
1/2tsp baking soda
1tsp baking powder
A pinch of cardamom pdr
Few stands of saffron soaked in warm milk.
For the ras i.e milk mixture to pour on the poked baked cake
Ingredients:
1 cup milk
Half cup condensed milk
3/4cup of cream
Few saffron strands soaked in milk.
For topping:
Whipped cream 250 ml fresh cream
Pistachios for garnishing
Dry red rose petals to decorate.
Method:
For the cake:
Whisk
yogurt and sugar until the sugar disolves. Add the baking powder and
baking soda. Whisk for few mins. It will form like a egg white frothy like
consistency. Add oil, saffron milk and cardamom pdr and whisk for a min.
Add the flour and give a fold with the spatula and bind it well. Don't
whisk. Careful lumps may form. Pour it in a greased desired cake mould
and bake it at 180 degree C for about 25 mins. To check the cake is
baked or not, just prick it with a toothpick. If it comes out clean then
the cake is done.
Take
out and let it cool completely. Make the milk mixture. For this mixture
you just have to mix all together with a spoon. No cooking required. Refer the ingredients table.
After the cake is cooled prick holes with a fork and pour the milk
mixture and let it set in the fridge for about 1 hr. After 1 hr take it
out and pour again the milk mixture on the cake. By doing this, the cake
absorbs all the milk and it stays soft and moist.
Lets move on to decorate the cake.
Whip the cream by adding 4 to 5 tbs of powdered sugar and whisk untill stiff peak.
Pipe it on the cake with desired design and decorate it with pista, rose petals and strands of saffron.
