 Strawberry White Chocolate Cupcakes (Eggless Cake Recipes)

These eggless strawberry white chocolate cupcakes are the perfect combination of sweet and fruity.

  Recipe

  Makes 12 to 15 cupcakes( depends on the size of the measuring cup )

Ingredients:

*For the cupcakes

Yogurt 1cup

Sugar ¾ cup

Baking soda  1/2tsp

Baking powder  1 1/2 tsp

Cooking oil ½ cup

Vanilla extract 2tsp

Flour 1 ½ cups

Fresh finely chopped strawberries  1 ½ cup

White chocolate 1 ½ cup chopped

* For the frosting

Cream cheese  330 gm (family pack)

Powdered sugar 2 cups

Vanilla extract 2tsp

Cream stabilizer 1 pack (optional) ( I used Dr.Oetker stablizer)

Method:

 Preheat the oven  at 180 deg C. Place a muffin tin with cupcake liners.

 In a medium bowl, whisk together the yogurt, baking powder, baking soda, and sugar until it bcomes frothy like eggwhite. Set aside. Add oil, vanilla extract and whisk once again for about 2 to 3 minutes.

Add the flour and mix until well combined.  Add the chopped strawberries and chopped white chocolate to it.

Give a nice fold. Divide the batter evenly among the cupcake liners, filling each about 3/4 of the way full.

Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Remove from the oven and let cool completely on a wire rack.

While the cupcakes are cooling, lets make the  cream cheese  frosting. 

In a large bowl, add cream cheese, powdered sugar, vanilla extract and stabilizer (optional). Whisk until light and fluffy for about 2-3 minutes.

                             


         

Fill the piping bag with the frosting using desired piping nozzle. You can use colours to give a double colour effect to the frosting. Top with fresh sliced strawberries. Enjoy this fruity chocolaty combination of cupcakes for any occasion be it a dessert or parties.
