 Nankhattai will always hold a special place in my heart. They are not just cookies; they are a reminder of childhood innocence and the small moments that create lasting memories. I still cherish those memories of when my mother used to bake it using the gas and sand method. Those days there was no OTG or oven to bake these goodies. Recipes were shared verbally or in manual format. I used to help my mother and it was great fun to explore this recipe back then. Always being childhood memories.

 Nankhatai, also known as Indian shortbread cookies, is a  eggless delightful and popular sweet treat that originates from the Indian subcontinent. It is a type of biscuit that is characterized by its crumbly and melt-in-your-mouth texture, making it a favorite among cookie lovers. 

Nankhatai is typically made from a combination of  5 ingredients all-purpose flour, a bit of chickpea flour, sooji, clarified butter (ghee), powdered sugar, and a hint of cardamom powder for flavoring. Flavors can be modified according to your taste. You can also add nuts, saffron, almond flour or tutti fruit.  The buttery richness adds a satisfying richness to each bite which I like it a lot. My family enjoys it.

                                                    

 

Recipe: Yields 20 to 25 Nankhatai. (Measurements of the cup size varies)

Ingredients:

Ghee or clarified butter 1 cup (melted)

Powdered sugar 3/4 cup 

Besan 2 tbsp 

Sooji 2 tbsp

All-purpose flour 1 cup 

A pinch of cardamom (optional) 

Chopped nuts ( almonds and pistachios) 2 tbsp


Method: 

In a large bowl add the ghee and powdered sugar and whisk well. Add the purpose flour, besan and sooji. Knead to a dough. Divide into equal portions and roll it into a ball shape. Preheat the oven to 180 deg. In a baking tray, place the parchment paper. 

Place the nankhatai and garnish with chopped nuts and bake it for about 15 mins. Take it out from the oven and let it cool completely. Enjoy the nankhatai as a dessert or as a teatime snack. They can be stored in an airtight container for several days.
