 Plum Cake (Eggless Cake Recipes)


Plum cake is a delicious and flavorful dessert that is commonly enjoyed during the Christmas season. The cake´s dense and fruity texture, combined with aromatic spices, makes it a comforting and festive treat. Despite its name, plum cake doesn´t actually contain any plums. Instead, it is made with variety of dried fruits, such as raisins, black currants and candied furits and cherries.

Plum cake has a rich, brown color, often darkened by the use of ingredients like molasses, brown sugar, or dark rum as it is a traditional recipe. The cake's texture is dense and moist, with a crumb that may be studded with bits of dried fruits. 

 

Every year during Christmas time, I plan to bake a plum cake but somehow did not work out. This year, I thought of baking it. I am posting this recipe on my blog.

I am sharing my eggless plumcake version. In this recipe, I have used candied cherries, black currants, candied fruits, and cranberries. It is alcohol-free. It was my first try and it came out so well what I hoped for.

 

The flavor of plum cake is a delightful blend of sweet and spices. The dried fruits contribute a natural sweetness, while spices such as cinnamon, nutmeg, and cloves add warmth and depth to the overall taste.

                                                                           

 

Recipe

 

Ingredients: 

 

1 cup of( mix) cranberries

Black raisins 2tbsp

Tutti frutti 2tbsp

Candied cherries 2tbsp

Orange juice 1 cup

You can also add dried figs, almonds walnuts if you wish.

Soak it in orange juice for about 4 hours.


For the cake:

 

Yogurt 1 cup

Brown sugar 3/4 cup

Baking soda 1/2tsp

Baking powder 1.5tsp

Oil half cup

Flour 1.5 cups

Cinnamon pdr 1/2tsp

Ginger pdr 1/2tsp

Nutmeg (I did not add)

Cornflour 1tbsp

Vanilla extract 1tsp

 

Method:

In a bowl, whisk yogurt sugar until the sugar dissolves. Add the baking powder and baking soda. Whisk till the mixture is frothy. Add oil and vanilla extract. Whisk for a minute.

 

Sieve the flour, cornflour, and the mixed spices.

 

                                                                     

 

 

Mix well by giving a fold. Add the soaked fruit mix to the batter. 

You may find the batter bit liquid. In that case, add additionally half a cup of flour to give the correct consistency. Mix well. There should be no lumps. Grease the tray. Place a parchment paper and pour the batter in the desired spring form. Tap twice to remove the air bubbles from the batter. Top it with extra candied cherry, nuts, and candied fruits of your choice. Preheat the oven to 180 degrees C.

 

Grease the tray and bake it at 180 degrees C for about 30 mins. Prick a toothpick to check if it is baked..if it comes out clean then it is done. Cool it and enjoy.
