 Eggless Apple Cake is a delightful and moist dessert that's perfect for any occasion, whether it's a cozy family gathering or a special celebration. Made with fresh apples and warm spices of your choice, this cake offers a comforting aroma and a burst of flavor in every bite 

This Eggless Apple Cake is sure to be a hit with its moist texture, cinnamon works well with apples The juicy apple chunks that goes into the cake batter and topped with apple slices, making it a delightful treat for apple lovers of all ages. Enjoy it as a dessert, snack, or even as a sweet breakfast option alongside a warm cup of tea or coffee. 

I got inspired to bake this cake when my friend posted a reel on Instagram. Some fresh apples were lying in my fruit basket. I thought of giving it a try.  To my surprise, it turned out super tasty and moist. My family enjoyed it. I am sharing my eggless version of the apple cake recipe.


Recipe:  Yields 6 persons
 

Ingredients: 

 All-purpose flour 1.5 cups

 Cornflour 1 tablespoon 

 Sugar 3/4 cup (Brown and white sugar)

 Baking powder 1.5 teaspoon

 Baking soda 1/2 teaspoon

 Cinnamon pdr 1 teaspoon

 Yogurt 1 cup

 Cooking oil half cup

 Vanilla extract 1 teaspoon 

 Apples (peeled and cored)  1 cup finely chopped 

Apples to stack on the top before baking  2 thinly sliced 

Powdered sugar for dusting


Method:

 
Preheat your oven to  150 degrees C. Grease a 9x9-inch square baking pan or round spring form of your choice or line it with parchment paper.
 

In a large mixing bowl, whisk together the yogurt, sugar, baking soda, and baking powder to a smooth frothy consistency.

 Add oil and vanilla extract and whisk again for a minute. Let all the ingredients combine well.
Gradually add all-purpose flour, and cornflour to the wet ingredients. Add the chopped apples to it.
Gently fold the batter until it is evenly distributed.

Pour the batter into the prepared baking pan and spread it out evenly with a spatula. Pat it twice to remove the incorporated air from the batter. Stack the sliced apples on the top. Drizzle some brown sugar on the top. 

Bake it in the preheated oven for about 30 to 40 minutes.  Insert a toothpick into the center of the cake comes out clean. The cake is fully baked. If the toothpick is not clean then bake it for another 15 to 20 mins. Make sure that the apple topping does not get burned.

Once baked, remove the cake from the oven and allow it to cool completely for about 45 minutes 

Carefully transfer the cake to a wire rack to cool completely. 

Once cooled, you can dust the top of the cake with powdered sugar for a decorative touch if desired.
Slice the Eggless Apple Cake into squares or wedges and serve as is or with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
