 Ammani Kozhakattai (South Indian Vegetarian Recipes)

 

Ammani Kozhakattai, or "Mani Kozhukattai" or "Mini Kozhakattai," is a traditional South Indian steamed dumpling or savory snack made from rice flour dough. It is a popular dish often prepared during festivals like Ganesh Chaturthi or as an evening snack. 

The name "Ammani" or "Mani" refers to the shape of the kozhakattai, which resembles small balls. I am cherishing my memorable childhood days. My mother used to make this during Ganesh Chaturthi.

 There are two ways of making the dough. 1) Soak the rice and grind it into a smooth paste. 2) Using the rice flour and making the dough instantly. I prefer the first method. I have shared both methods.

                                                                 

 

Here's the recipe of how to make Ammani Kozhakattai in 2 ways:- 


Yields for 3 persons


Ingredients:

 

For the dough:

Rice 1 cup soaked for 2 hrs (You can also use rice flour. I have shared the recipe in both the ways.)

 

Salt to taste

 

Kashmiri chili pdr 1/2 tsp

 

A pinch of asafoetida (hing)

 

Oil 2 tbsp (for greasing)

 

For the tempering:

 

Oil 1tbsp

Mustard seeds 1tsp

Urad dal (split black gram) 1tsp

Dry red chilies, broken into pieces 2-3 dried  

A pinch of asafoetida (hing)

Curry leaves a sprig

Salt to taste

 

Method 1:- 

 

Soak the rice for 2 hrs. Drain the water. Add a pinch of salt and grind it into a smooth paste. In a pan, pour the batter and add the drained water to a liquid consistency. (Don´t discard the water, as it is full of nutrition)

 

Cook it in a medium heat. Keep on stirring. It will form a dough leaving the side of the pan. Add half a tsp of oil.

 

Mix well with the help of a spatula. Please turn off the heat and transfer it to a bowl. Knead well into a smooth dough. Add Kashmiri chili powder powder and a pinch of asafoetida. Roll it into small balls. Steam it in an idli steamer for about 15 mins. 

 

Method 2:-

 

In a saucepan, bring water to a boil. Add salt and oil to the boiling water.

Lower the heat and gradually add the rice flour to the boiling water, stirring continuously to avoid lumps. Add all the rice flour is added, continue stirring until the mixture forms a smooth dough. Turn off the heat and allow the dough to cool slightly.

 

Once the dough is cool enough to handle, knead it into a smooth dough.

Roll the dough into small balls. 

 

For Tempering:-

 

Heat oil in a pan for tempering. Add mustard seeds and let them splutter.

Add urad dal, chana dal, dried red chilies, asafoetida, and torn curry leaves to the pan. Saute until the dals turn golden brown.

Add the rice flour balls (kozhakattai) to the pan and gently stir to coat them with the tempering. Remove the Ammani Kozhakattai from the heat and serve hot as a snack or side dish.

Ammani Kozhakattai is typically enjoyed with coconut chutney or spicy tomato chutney. The dish is loved for its simplicity, delicious flavor, and unique texture, making it a favorite among South Indian households.
