Moringa Leaves Chutney (Pickles)
Moringa leaves chutney, also known as drumstick leaves chutney, is a nutritious and flavorful condiment that adds a healthy twist to traditional chutneys. Moringa leaves are known for their impressive nutritional profile, which includes vitamins, minerals, and antioxidants. This chutney is a wonderful way to incorporate these superfood leaves into your diet.
The chutney has a unique, slightly bitter taste from the moringa leaves, balanced by the spiciness of green chilies, the tanginess of tamarind, and the earthiness of roasted lentils. The addition of coconut which is an optional ingredient provides a subtle sweetness and creamy texture, while mustard seeds and curry leaves add an aromatic touch. There are different ways of preparing Moringa Chutney. In some homes, there is an addition of shallots and garlic. I am sharing my version. No onion, garlic, or coconut. My recipe is a simple one.
Recipe: Yields for 4 persons
Ingredients
Moringa leaves (washed and stems removed) 1 cup fresh.
Oil 1 tablespoon
Channa dal 1 tablespoon
Urad dal 1 tablespoon
Tamarind small ball size
Whole dry red chilies 3 -4 (according to your spice level)
Asafoetida half teaspoon
Salt to taste
Method:-
Wash the moringa leaves thoroughly and set them aside to drain.
Heat oil in a pan over medium heat. Add the channa dal and urad dal, dry red chilies tamarind, roasting them until they turn golden brown.
Add the washed moringa leaves and cook for 2-3 minutes until they wilt slightly. If using grated coconut, add it in the last 30 seconds of cooking. Add salt to taste.
Transfer the sautéed mixture to a blender.
Blend into a smooth paste, adding a little water as needed to reach the desired consistency.
Moringa leaves chutney is ready! Serve it with dosa, idli, or hot steamed rice with a dollop of ghee on the top.
This moringa chutney is both nutritious and versatile, adding a boost of vitamins, iron, and antioxidants to any meal.
