In Northern India, traditional dishes such as Dal Makhani, Channa Masala, and Aloo Gobi are beloved. Dal Makhani, a luscious lentil-based dish enriched with cream, Channa Masala, a robustly spiced chickpea dish, and Aloo Gobi, featuring potatoes and cauliflower seasoned with aromatic spices, are particularly popular.
Moving to Western India, favorites include Vada Pav, a delightful street food comprising deep-fried potato croquettes served with chutney and pav, and Dhokla, a steamed cake made from fermented rice and lentils, known as Khatta Dhokla.
